Developing a proactive research agenda

NIZO Food Research wants to improve her service level towards clients in the dairy industry. NIZO therefore wishes to become more proactive with her research projects. In more concrete terms, they want to define new projects which will be interesting for the dairy industry in future. The focus is on the end consumer. NIZO wants to make sure that there is a strong relevance for her clients and wishes to optimize communication about the problems and opportunities in the following areas: Quality & Safety, Texture, Flavour, Processing, Health.
 
To this end our consultants were requested to deliver a series of SPARK sessions around the above mentioned subjects. We looked at the end user (consumer), via trends and products in the current market, extrapolated to future offerings and followed the line of reasoning back to the producer in order to define the areas that require increased attention in the future. Following from there we defined the initial drafts for future research and project briefings.
 
Initial Project leader’s feedback: Nice combination of facilitation and content knowledge. Good funnelling: from a lot of ideas to concretisation of a few ideas. Approach is good in order to become more open and think in new ways, outside the every day business. Good exchange within the group.
 
Project leader’s feedback: The sessions were very succesful now we can look back on very productive briefings. As a result we have achieved real innovations such as: dairy snacks (combinations of dairy and fruit, in cheese or breaker-type products), cheese based on vegetable oils, different types of milk based on adapted animal feed, “clearmilk” and straws with a flavour which bring flavour into the milk during consumption.
